Sweet Potato Sliders
Ingredients
Butter (1/4 cup)
Garlic (15 g or 1 tbsp) ‡
Fresh red chilies (10 g or 2 tsp)
Rosemary (10 gms or 2 tsp) ‡
Sweet potato, sliced (1 cup) ‡
Onion, sliced (1/2 cup) ‡
Salt, to taste
Focaccia bread, toasted (slider size, 12pcs)
Pesto sauce (45 g or 3 tbsp) ‡
Tomato Rosemary Sauce (45 g or 3 tbsp) ‡
Salt, to taste
Sundried tomatoes (12 pcs) ‡
Radish and Beetroot Microgreens (for garnish) ‡
Crushed black pepper (10 g or 2 tsp)

Method
Makes 6 Sliders
Gather all the ingredients, and process all the vegetables. Make sure your sweet potato is thinly sliced to allow it to cook easily.
In a hot non-stick pan, melt some butter and sauté garlic, chili and rosemary.
Once the flavor of the ingredients is combined together, add the sliced sweet potato and cook it on a medium flame.
Once your sweet potato is cooked, take it out in a bowl.
In the same pan, add a little more butter and allow it to melt.
Add onions and salt and let it cook on a medium flame until the onions are caramelized.
While this is being done you can started assembling your slider.
First make sure your bread is toasted, apply pesto on one side & tomato rosemary sauce on the other, put a slice of sundried tomatoes on the bread, add the cooked sweet potato and finish by adding the caramelized onions and radish and beetroot microgreens.
