Ingredients
Cookies
Unsalted butter (1/2 cup or 115 g) ‡
Sugar (200 g or 1 cup)
Eggs (2)
Citrus Marmalade (200 g) ‡
All Purpose Flour or Maida (3 cups)
Baking Soda (1/2 tsp)
Sea Salt (1/2 tsp)
Icing
Grated Zest of One Orange ‡
Grated Zest of One Lemon ‡
Fresh Squeezed Orange Juice (1/4 cup) ‡
Fresh Squeezed Lemon Juice (1 teaspoon) ‡
Unsalted butter, melted (3 tbsp) ‡
Sea Salt (1/8 tsp)
Confectioners' or Powdered Sugar (3 cups)

Method
Makes 36 cookies
Cream butter and sugar in a large bowl until light and fluffy. Break eggs into a separate bowl and whisk. Stir into butter-sugar mix. Mix in Citrus Marmalade.
Sift the flour, baking soda and sea salt together, then stir slowly into the butter mixture until just combined. Cover bowl and refrigerate for 1-2 hours until mixture is chilled.
In the meantime, prepare icing by combining zests, juices, melted butter and sea salt in a bowl. Whisk in the confectioners' sugar until the icing is smooth. Cover and set aside.
Preheat oven to 150 degrees Celcius or 300 degrees Fahrenheit. Line a few sheet pans with baking paper. Use a couple of teaspoons to drop walnut sized dollops of the dough onto the pans, spaced about 3 inches apart.
Bake cookies for 20 minutes, until golden brown. Remove from oven and allow to cool completely.
Once cool, ice the cookies with your icing using a butter knife or small spatula.
