Harissa Sweet Potato Hash

Ingredients
Baby Spinach (1 cup) ‡
Spring Onions, chopped (1 pc) ‡
Onion, diced (1/2 cup) ‡
Red Bell Pepper, chopped (1 pc) ‡
Garlic, minced (1 clove) ‡
Sweet Potato, cubed (2 pcs) ‡
Harissa Paste (2 tbsp) ‡
Coconut Oil, (2-3 tbsp) ‡
Black Beans (1/2 cup)
Paprika (1/2 tsp)
Cumin (1/2 tsp)
Salt, to taste
Black Pepper, to taste

Method
Serves 2
Heat 1 tbsp of coconut oil on a skillet over medium heat and cook the onions till tender. Add the bell peppers, garlic and cook for another 3-4 minutes until softened.
Add the sweet potato, harissa paste, spring onions, paprika, cumin and add 1 tbsp of coconut oil and cook till the potatoes are tender.
Finally add the spinach and black beans as well as salt and pepper to taste and toss till spinach is slightly wilted. Transfer to serving bowl and enjoy!
