French Onion & Gruyere Grilled Sandwich

Ingredients
Grass Fed Butter (2-3 tbsp) ‡
Spring Onion, thinly sliced (2-3) ‡
Onion, thinly sliced (1 pc) ‡
Bone Broth (1/2 cup) ‡
Thyme (2 sprigs) ‡
Parsley, chopped (1 tbsp) ‡
Worcestershire Sauce (2 tsp)
Aged Gruyere Cheese, shredded (3/4 cup) ‡
Sugar (1 tsp)
Olive oil (1tbsp)
Sourdough Bread
Black Pepper, to taste
Salt, to taste

Method
Serves 2
Melt the butter and olive oil in a large skillet over medium heat. Add the spring and regular onions. Cook for about 5 minutes till tender.
Add into the skillet the salt, black pepper, sugar, thyme, parsley & worcestershire sauce and stir. Cover with a lid and let cook for 5 minutes.
Then add the bone broth to the mixture and cook for a further 2 minutes and remove from heat.
On a preheated skillet add a slice of the sourdough bread (buttered side on the pan) and add some shredded Gruyere cheese on top of it. Then add the French onion mix and then another layer of shredded Gruyere cheese and finish with another slice of the sourdough (buttered side up).
Flip when bottom is golden and crispy and repeat on the other side.
Cut and Serve!
