Garlic Fried Raw Banana Plantains

Ingredients

  • Raw Banana Plantains, peeled, halved and cut cross wise (6 full pcs)

  • Garlic, finely grated (6 cloves)

  • Coconut Oil (1 cup)

  • Sea Salt, to taste

  • Black Pepper, to taste

Method

Serves 1

  1. Put the grated garlic in 2 cup of water and mix vigorously and set aside.

  2. Heat 1/2 cup of the coconut oil in a skillet on medium heat and fry the plantain pieces, turning once, till golden about 5 minutes. Take them out of the skillet and put them on a paper towel.

  3. Flatten plantains slightly using a chef knife or spoon to gently press them down. Soak with the garlic water for 5 minutes.

  4. Remove from the garlic water, pat dry and fry in the remaining 1/2 cup of oil for about 8 minutes till deep golden brown. Drain on paper towels and then sprinkle with sea salt and black pepper.

  5. Serve and enjoy!
