Poached Pears with Gruyere & Honey

Ingredients
Pears, peeled and halved (5 pcs) ‡
Raw Multi-flora Honey (3 tbsp) ‡
Grainy Gruyere, grated (1 cup) ‡
Thyme, for Garnish ‡
Pine Nuts, toasted
Dry White Wine (3 cups)
Lemon Peel (1 pc) ‡
Star Anise (1 pod)
Cloves (7 pcs)
Cinnamon Sticks (2 pcs)

Method
Serves 2
Prepare the poaching blend by combining the wine, lemon peel, star anise, cloves and cinnamon together and then placing the pears in this blend taking care to coat and blend and add some water to cover the pears in the liquid.
Bring to the boil and then reduce the heat and simmer for 15-25 minutes.
Remove pears from the liquid and place on a pan coating each half with cheese and cooking just long enough for the cheese to melt. Place on serving dish.
Add thyme, honey and toasted pine nuts on each pear and serve.
