Brinjal Cotolette

Ingredients
Brinjal, sliced round (2 pcs) ‡
Grated Gruyere Cheese (1 cup) ‡
Almond Flour (1/2 cup) ‡
Breadcrumbs (1/2 cup)
Salt, to taste
Black Pepper, to taste
Olive Oil,
Eggs, 2 pcs (optional)

Method
Serves 2
Pass the brinjal slices through the almond flour and then in a mixture of the eggs and grated cheese with salt and pepper and finally the breads crumbs making sure it all sticks by pressing gently into each slice for a rich coating.
Heat the olive oil on a skillet and fry a few pieces of the brinjal at a time with both sides being cooked till the breadcrumbs start goldening.
Keep warm and serve!
