Brinjal Cotolette

Seasonal Fruit Bowl with Mango Vinaigrette

Ingredients

  • Brinjal, sliced round (2 pcs)

  • Grated Gruyere Cheese (1 cup)

  • Almond Flour (1/2 cup)

  • Breadcrumbs (1/2 cup)

  • Salt, to taste

  • Black Pepper, to taste

  • Olive Oil,

  • Eggs, 2 pcs (optional)

Method

Serves 2

  1. Pass the brinjal slices through the almond flour and then in a mixture of the eggs and grated cheese with salt and pepper and finally the breads crumbs making sure it all sticks by pressing gently into each slice for a rich coating.

  2. Heat the olive oil on a skillet and fry a few pieces of the brinjal at a time with both sides being cooked till the breadcrumbs start goldening.

  3. Keep warm and serve!
