Ingredients

  • Quinoa, cooked (2 cups)

  • Pineapple, chopped (2 cups)

  • Red Bell Pepper, chopped (1 pc)

  • Arugula (1 cup, more depending on taste)

  • Zesty Pineapple Dressing (3-4 tbsp)

Method

Serves 2

  1. Combine the ingredients in a bowl and pour over the pineapple dressing and mix well. Place in fridge.

  2. Plate and Serve Chilled!
