Kimchi Fried Rice

Ingredients
Jasmine Rice or Brown Rice, cooked (1 cup dry)
Carrot, chopped (2 pcs) ‡
Green Peas, de-shelled (1/2 cup) ‡
Shiitake Mushrooms, sliced (1 cup) ‡
Kimchi, (2/3 cup) ‡
A2 Ghee (1 tbsp) ‡
Olive Oil (1 tbsp)
Spring Onion Greens, sliced (2 pcs) ‡
Soy Sauce, to taste
Garlic, Chopped (2 cloves) ‡

Method
Serves 2
In a large deep skillet melt the ghee and oil and add the mushrooms and cook evenly on both sides for 4-5 minutes. Add the garlic and continue to cook for another 2 minutes.
Add the carrots, peas, kimchi along with soy sauce to taste and continue to cook for another 3-4 minutes. Add the cooked rice to the pan and mix well together.
Garnish with the spring onions and serve!
